Greek Salad KABOBS


For the kabobs:
  • 6 slices Harper’s White Bread
  • 2 tablespoons butter, melted
  • 6-8 slices Provolone cheese
  • 1/2 teaspoon garlic salt
  • 6 ounces sliced pepperoni
  • 2 tablespoons Parmesan cheese
  • 4-5 ounces sliced salami
For the dip:
  • 4 ounces cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1/2 cup chopped cucumber
  • 1 tablespoon chopped fresh dill
  • 1 tablespoon chopped fresh parsley
  • 1 clove garlic, minced
  • Salt and pepper, to taste


  1. Preheat oven to 350 degrees
  2. Place cubes of bread on a large baking sheet. Drizzle with olive oil and season with salt and pepper. Toss to coat well. Bake for 12-15 minutes or until bread is golden and lightly crisped; cool
  3. Meanwhile, make dip by combining all ingredients in a food processor or blender. Process until well combined; refrigerate
  4. When bread is cool enough to handle, thread on skewers, along with olives, tomatoes and mixed greens. Serve with cucumber dip
